While I was visiting Jolea in Key West last month, she took me to an eating establishment called Sweet Teas. The menu there consisted of a lot of Home Style standards like Turkey and Dressing, Pot Pie of the Day and Meatloaf to name a few... I was aiming for the Pot Pie, but I didn't get past the meatloaf. I'm sure they have other yummy stuff too. They also serve a whole assortment of side dishes to go along with the yummy entries. Jolea and I chose the meatloaf
We were given the chance to try something that I'd never tasted no matter how many times my Daddy offered from across the table every time my Momma cooked them for him.... Collard Greens. Daddy love them, no one else would dare eat them. Well that night in Key West the bartender brought out a bowl for us to try
So, once I get home all I can think about is Collard Greens. I have to learn to cook them. I find a recipe online... allrecipes.com. I also called my friend Deanna. She laughs at me as she tells me how her family prepares them. In her words "you people don't eat this kind of food."
Yesterday I decided that I'd cook Collards
I washed them and removed the center vein as directed.
I removed the meat from a smoked turkey leg and chopped it up like Deanna had told me to do. I used this in place of the ham hock that the All Recipes recipe suggested. I was a little leery of the whole hock thing.

Thirty minutes later we have "a mess of collards." They aren't very pretty but they sure were good over cornbread
Let me get that not so nice picture of Collards out of your brain with this lovely picture of some Mochi. Aren't they pretty? I guess I could have had them for dessert and called it Eating Multicultural.
It's gonna be another hot one today! 84F at 5:45AM! We did get a few sprinkles this morning, so I started the sprinkler in the back yard, sort of a challenge to those clouds. They wimped out as usual and turned the humidity up.
Oh well...

Oh, you are so funny!! I love it! I am LOL!! Collard Greens! Of all things! They are oh, so popular where we live so one day I decided to cook them so I just boiled them a bit, we tasted them and then tossed them. Guess I should have used your recipe! They certainly are good for you...all that green. And hey, years ago - when on the boat, I had that pressure cooker. Well, not that exact one as that one is yours but I had one just like it and loved it so much! Keep on cookin' lady!
Hey Suzie, you gotta add the secret ingredient.... 2 tablespoons of sugar. You remember what Mary Poppins said. Didn't you just love this pressure cooker? Did you get it at the State Fair? I did. Wish I'd bought a smaller one but the guy sold us on Pressure Fried Chicken (like KFC) this was the smallest that you could pressure fry chicken in. It's really huge and I should sell it and buy a smaller one. Jolea and I only fried chicken in it once. Amazing how she can rule my money.
I am going to have to do some research to find out what these Collard Greens are called in this neck of the woods....
Sigga, I looked at collard greens in Wikipedia and Iceland wasn't on the list of places where people normally eat collards. But it's a lot like kale, so if you guys eat kale then you pretty much know what collards taste like.
Suzie, I also found that collards are the state leafy green in So. Carolina! I think the state leafy green of Texas is a $20.
I had kale in Hamburg, or at least that is what I think it was - they have a local festival for it... it looks a bit like silver beet could it be a relation?
I, too, turned my nose up at collards and turnip greens, etc. They do taste better now. Must be an acquired taste. You HAVE to have the cornbread though. Yum!
They just don't look good. That pink thing does though.
Oh yeah, gotta have cornbread. You should try them Heather! Have you ever had Mochi? It's Red Bean curd in a rice cake! These were flavored with Strawberry and Orange. YUM!
